Chicken Waldorf Salad

Ingredients
1/3 cup low-fat mayonnaise
1/3 cup nonfat or low-fat plain yogurt
2 teaspoons lemon juice
1/4 teaspoon salt
3 cups chopped cooked chicken breast
1 medium red apple, diced
1 cup halved red or green grapes
1 cup sliced celery
1/2 cup chopped walnuts, toasted if desired

Method

Lightly toss chicken with grape halves, cranberries, apple, walnuts, and onion in a salad bowl. Whisk mayonnaise, vanilla yogurt, and lemon juice in a separate bowl. Pour dressing over salad and toss again to coat. Serve with with a chunk of whole-grain baguette.

Chicken Sandwich

1/2 cup shredded cooked chicken
1/4 cup chopped carrots
2 tablespoons barbecue sauce
2 teaspoons light ranch dressing
1 small whole-wheat sandwich bun
1 leaf romaine lettuce



Method

Mix shredded cooked chicken, carrots and barbecue sauce in a bowl.
Spread ranch dressing on the bun.
Top with the chicken mixture and lettuce.
Serve it to your children for dinner or lunch.
This is healthy with less oil and the barbeque sauce will add the flavour to your cooked chicken.

Chicken Salad

Boneless Chicken Breasts – 300 gms
Salt to taste
Lemon Juice
Black Pepper
Celery (sliced thinly)
Apple (one small)
Hard Boiled Eggs (one)
Carrots
Mayonnaise 1 small cup
Lettuce Leaves 4

Method

Boil chicken breasts in salted water for fifteen minutes. Cool and shred.
Sprinkle lemon juice, a pinch of salt, pepper powder.
Soak the celery in chilled water for ten minutes. Drain and wipe dry.
Peel and core the apple and slice thinly. Soak in chilled salted water for ten minutes; drain.
Chop the egg white and pass the yolk through a sieve.
Blanch the carrots in boiling water; drain and refresh in cold water.

Place the chicken, celery, apple, egg white, carrots and onion in a bowl. Pour the mayonnaise over the ingredients and toss well.
Season with salt and pepper; arrange the lettuce in a serving plate and place the salad on it. Garnish with the sieved egg yolk and serve immediately.

Garlic Chicken Parmesan (Baked)

This is a delicious baked chicken recipe that's easy to cook… all you need are few handy ingredients. You can serve with a salad and pasta or rice for quick scrumptious dinner. – Shaina Pahwa

2 tablespoon olive oil
Garlic clove 1, minced
Dry bread crumbs
2/3 cup grated parmesan cheese
1 teaspoon dried basil leaves
¼ teaspoon black pepper grounded
Boneless chicken breasts 6 pieces

Method

Preheat oven to 350 degrees F (175 degrees C). Grease your baking dish.
In a bowl, blend the olive oil and garlic.
In a separate bowl, mix the bread crumbs, Parmesan cheese, basil, and pepper.
Dip each chicken breast in the oil mixture, then in the bread crumb mixture.
Arrange the coated chicken breasts in the prepared baking dish, and top with any remaining bread crumb mixture. Bake 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.
