Lunch Box Recipes – Chapatti Roll

Ingredients:

Chapattis or Paranthas
Vegetables- carrots, beans, peas, capsicum, cauliflower, cabbage, green chillies, onion, ginger, garlic or ginger –garlic paste, tomato sauce, lemon juice

For Filling:
1 carrot cut into small pieces 
5 French beans
1/4 cup boiled peas
1 capsicum cut into small pieces
1 large floret of cauliflower
1/2 cup cabbage shredded
1-2 green chillies (avoid if your children do not prefer it spicy)
1/4 tsp. garlic paste (or 5 flakes crushed)
1/4 tsp. ginger paste (or 1/2" piece grated)
1/2 tsp. lemon juice
1/2 tsp. soya sauce
1/2 tsp. tomato ketchup
Salt to taste
1 tbsp. oil

Method

Heat oil in a pan, preferably a non-stick pan add ginger, garlic and green chillies. Stir till a little brown. Add chopped vegetables and stir fry till tender.

Add soya sauce, tomato sauce, salt and a bit of sugar and stir.

Add a spoon of lemon juice and take it off fire.

Divide the filling mixture into small portions.

Now take a chapatti or parantha. Fill it with the mixture and make it into a roll. Sprinkle some cheese for kids who love cheese.
